Christine and Christian Hayes launched Dandelion Catering Co. in 2008 and in the summer of 2019 they opened the doors to The Garrison, an intimate restaurant and bar sitting on the Royal River in Yarmouth, Maine. 

With their own riverside gardens as well as local farms, creameries, sustainable fishmongers, foragers, distilleries and breweries, Chef Christian and his team create daily changing menus of small and large plates inspired by the Asian and Mediterranean cuisine that has fueled their careers and love of food for over the last three decades.

Since before The Garrison opened it's doors in 2019, Averil has been at the helm of our bar and beverage program. Since day one she has been thoughtfully using her wealth of knowledge to curate a bar program of nuanced and approachable wines and drinks.
